Caramelised Date Sauce (Date Caramel)

This Date Caramel is the easiest caramel recipe you will ever make. You are just 5 ingredients and 15 minutes away from the most delicious sweet and salty spread… Be warned, it is addictive!

Ingredients

  • 150 g Medjool dates
  • 120 ml full-fat coconut milk
  • ½ tsp vanilla extract
  • pinch of ground cinnamon
  • pinch of flaky sea salt

Instructions

  • Soak the dates in boiling water for 10 minutes. 
  • Drain and remove the stone. 
  • Pop into a blender or food processor and add the coconut milk, vanilla extract, cinnamon and salt. Blend until smooth and creamy. 
  • Spoon into a bowl or jar, cover and store in the fridge.

To store: It will keep covered in the fridge for 1-2 weeks, if not longer. Just use your sense of smell and sight - if it looks and smells good, it's no doubt fine to eat. Use common sense!
To freeze: I like to transfer to an airtight tupperware and you can freeze it for up to 3 months. Defrost in the fridge overnight until thawed. Give it a good stir when ready to use it. If it's thickened, add a splash of coconut milk (or any milk) and use an electric whisk to bring it together.
Make ahead: Yes, keeps for 1-2 weeks covered in the fridge. I like to keep it in a jar for ease.
Soft dates: using soft and moist dates like Medjool make this Date Caramel super simple and quick - if you use regular dates (which are drier and harder) they will need to soak for longer (around 30 minutes) and be topped up with water.
A good blitz: you really need to blend well to form a creamy Date Caramel. Don’t skimp on this - keep going until you get a silky smooth texture. 
1 ingredient wonder: if you use Medjool dates, you could actually make a one ingredient Date Caramel by just blitzing the softened dates. It won’t taste as creamy without the coconut milk, but is a quick and easy hack to have up your sleeve.
Coconut milk: opt for full-fat coconut milk for the best texture and flavour.
Serving suggestions: this is delicious spread onto slices of crisp apple or swirled through yogurt for a tasty snack or breakfast bowl.
