Roasted Fresh Tomato And Garlic Soup Over Rice

I love roasted tomato and garlic soup so much, so comforting and delicious. This is one of my favourites and I love serving it over rice to give it some texture and a little more substance but hot buttery hunks of bread work equally well. The fresh tomatoes are roasted in the oven with a whole head of garlic and red onion, low and slow, then blended with fresh basil, chilli flakes and stock. It can also be done in the air fryer if you have one of those.
