Homemade Basil Pesto

Homemade pesto is one of the easiest things to make and also one of the most useful. A good pesto can transform a simple meal into something extraordinary.

Ingredients 

  • 1/2 cup pine nuts
  • 3/4 cup grated Parmesan
  • 2 garlic cloves
  • 6 cups basil leaves, about 3 bunches
  • 3/4 cup extra-virgin olive oil
  • 1 tsp Maldon salt (taste and add a little more if you think it needs it

Instructions 

  • Toast the pine nuts in a dry pan until golden brown. (This is a very important step)
  • Transfer to a food processor and let cool.
  • Add the basil, garlic and oil and blitz until mostly smooth.
  • Pour into a bowl and stir through the finely grated Parmesan. Season with 1/2 teaspoon of Maldon. Taste and add the remaining salt if you think it needs it.

Notes

Delicious with pasta, stirred through risotto, drizzled over roasted vegetables, spooned over eggs, underneath steak or lamb, mixed with mayo…I could go on and on!!
