This recipe for Chicken Souvlaki Pita are one of those recipes. You really just have to mix up the chicken with some good flavours like garlic, lemon, vinegar. Then mix the tzatziki. Grill the chicken. Done!

Chicken souvlaki pita is a popular Greek dish. Souvlaki refers to the grilled meat (chicken here) on a skewer but it is typically served with pita, tzatziki, sliced tomato and onion too. It’s really simple to make and it’s also one of those meals where everyone can customise their own – add more tomato, less tzatziki, more chicken and so on.

What you’ll need to make these simple Chicken Souvlaki Pitas

Chicken breast (cut into cubes but you could also use chicken thigh if you’d rather)
Fresh oregano (use dried if you can’t find fresh)
Garlic
Lemon
Red wine vinegar
(this adds nice flavour but also tenderises the meat in the marinade)
Cucumber (half grated for the tzatziki and half sliced to add to the pita)
Greek yoghurt (as a base for the tzatziki, use full-fat and thick yoghurt)
Pitas
Red onion
(sliced to add to the pitas. If you find raw red onion a bit strong, soak the red onion in some ice water, giving it a bit of a massage at the same time. This will remove the strong onion flavour but still give you good crunch and a more subtle onion flavour)
Tomato
Fresh dill

What skewers should I use for chicken souvlaki pitas?

Using large metal skewers is the best here as you can reuse them and you avoid any burning of wood. The metal also conducts heat so it helps cook the chicken in the centre. If you don’t have, wooden skewers also work but soak them for at least 10 minutes in water before adding the chicken on and cooking. This stops them from burning. If you don’t have skewers, you could also just grill or fry the chicken breasts whole and then chop them up once cooked. Not conventional for souvlaki but it would work!

How should I serve chicken souvlaki pitas?

I like to smooth on the tzatziki first then load it up with chicken, sliced tomato, sliced onion, cucumber and fresh dill. But you could also add:
– Pickled onions
– Pickled green chillis if you like a bit of spice
– Houmous if you prefer to tzatziki
– Lettuce/rocket
– Chips!
– Feta cheese sprinkled on top
– Kalamata olives

Ingredients 

For the Chicken:

  • 450 g chicken breast, cut into 1-inch cubes
  • 2 tbsp fresh oregano, finely chopped
  • 3 garlic cloves, minced
  • 1 lemon, juiced
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp flakey salt
  • Pepper to taste
  • 4 Skewers
  • 2 tsp olive oil

For the Tzatziki:

  • 1/2 large cucumber, grated
  • 2 cups plain Greek yoghurt
  • 1 garlic clove, grated or minced
  • 1/2 lemon, juiced
  • 1 tbsp olive oil
  • salt and pepper

For the wraps:

  • 4 pitas
  • Cucumber, sliced
  • Red onion, sliced into strips
  • Tomato, sliced
  • Fresh dill

Instructions 

  • Place the chicken in a bowl with the oregano, garlic, lemon, red wine vinegar, olive oil, salt, and pepper; mix and marinate in the fridge for at least 30 minutes
  • Mix together the ingredients for the tzatziki and set aside in the fridge
  • Skewer the chicken on 4 skewers and then preheat a grill pan (or pan) over medium high heat; add oil and sear chicken for 4-6 mins per side until cooked through
  • Heat pita in a lightly oiled pan over medium-high heat for 30 secs – 1 min per side then spread on a thin layer of tzatziki; add cucumber, onion, tomato, and the chicken souvlaki
  • Top with more tzatziki and fresh dill, a squeeze of lemon juice and enjoy!
