Tomato Sandwich

It’s officially tomato sandwich season. One of the GOAT sandwiches. The tomatoes must be super ripe, you need plenty of mayo (always Hellmans for me - not an ad just a super fan), plenty of Maldon salt, pepper and a little olive oil. And it has to be sliced white bread, crusts off!

Ingredients 

  • 2 slices of white bread
  • 1 large ripe tomato
  • Good quality mayonnaise
  • Salt
  • Pepper
  • Extra virgin olive oil

Instructions 

  • Slice the tomatoes into thick slice. Spread mayo generously on the bread, layer with tomatoes and season well with salt, pepper and olive oil. Top with the other side of bread, cut off the crusts and dig in!
