Very Green Pasta Full Of Veggies

This pasta sauce is a life saver when you’re in a hurry and come home ravenous. It’s also something you can pull together with bits you find lurking in the fridge - a good old fridge forage.

Ingredients 

  • 1/2 bag baby spinach
  • 1 handful rocket
  • 1 handful basil leaves
  • 2 garlic cloves
  • 40 ml olive oil
  • 1 handful parmesan, grated
  • pinch Maldon salt
  • 200g pasta

Instructions 

  • Get your pasta on to boil in well salted water.
    I blanched roughly half a bag of spinach, a handful of rocket and a handful of basil leaves (but seriously any greens you have will do - salad, herbs etc). Add the garlic.
    Then whizz that up in a blender with a generous glug of good olive oil, a handful of grated Parmesan and a pinch of Maldon salt.
    Toss together with the cooked pasta and a splash of cooking water.
