Hot Honey Halloumi Salad With Vibrant Basil Dressing
This is such a good salad: hearty but healthy and delicious. Hot honey halloumi with crispy roasted new potatoes, lentils, tomatoes and rocket all drizzled in a creamy basil dressing. Heaven!
Ingredients
For the salad:
- 1 cup of pre-cooked lentils
- 300 g new potatoes, cooked
- Handful of rocket
- Handful of cherry tomatoes, sliced
For the halloumi:
- 250 g halloumi
- 3 tbsp honey
- 1/2 lemon, Zest and juice
- 1 tbsp olive oil
- A sprinkle of chilli flakes
For the dressing:
- 1/4 cup yoghurt
- 1 cup fresh basil leaves
- 1/2 cup parsley leaves
- 1 tbsp red wine vinegar
- 1/2 garlic clove
- 1/4 cup light olive oil, not extra-virgin
- salt and pepper
Instructions
- Slice the halloumi and place it in a bowl. Add the honey, lemon zest & juice, olive oil and chilli. Make sure all of the halloumi is coated in the marinade.
- Leave in the fridge to marinate for a few hours.
- Fry the halloumi on medium heat until golden brown on both sides. Add the remaining marinade from the bowl and allow to bubble.
- Blitz together all the dressing ingredients. Taste and adjust the seasonings if needed them set aside.
- On a large plate, add the potatoes, lentils, rocket, tomatoes and halloumi. Drizzle with the dressing and enjoy!
