Hot Honey Halloumi Salad With Vibrant Basil Dressing

This is such a good salad: hearty but healthy and delicious. Hot honey halloumi with crispy roasted new potatoes, lentils, tomatoes and rocket all drizzled in a creamy basil dressing. Heaven!

Ingredients 

For the salad:

  • 1 cup of pre-cooked lentils
  • 300 g new potatoes, cooked
  • Handful of rocket
  • Handful of cherry tomatoes, sliced

For the halloumi:

  • 250 g halloumi
  • 3 tbsp honey
  • 1/2 lemon, Zest and juice
  • 1 tbsp olive oil
  • A sprinkle of chilli flakes

For the dressing:

  • 1/4 cup yoghurt
  • 1 cup fresh basil leaves
  • 1/2 cup parsley leaves
  • 1 tbsp red wine vinegar
  • 1/2 garlic clove
  • 1/4 cup light olive oil, not extra-virgin
  • salt and pepper

Instructions 

  • Slice the halloumi and place it in a bowl. Add the honey, lemon zest & juice, olive oil and chilli. Make sure all of the halloumi is coated in the marinade.
  • Leave in the fridge to marinate for a few hours.
  • Fry the halloumi on medium heat until golden brown on both sides. Add the remaining marinade from the bowl and allow to bubble.
  • Blitz together all the dressing ingredients. Taste and adjust the seasonings if needed them set aside.
  • On a large plate, add the potatoes, lentils, rocket, tomatoes and halloumi. Drizzle with the dressing and enjoy!
